The idea for the extra crispy cheesy upside down slice was sparked in 1946, when Gus Guerra and Connie Piccinato baked their first pie in a square-shaped, forged-steel pan borrowed from a local automotive plant. They flipped the traditional pizza on its head, layering the cheese below the sauce. Their ingenuity resulted in the cheese running off the side and filling the edges of the deep steel pans forming the iconic crispy crust.
