Gluten Free Pumpkin Spice Baked Oats by @basicswithbails 🎃🍂 Save and follow for more easy gluten free desserts! Celebrating 200k on Instagram the best way I know how - Baked oats AND in pumpkin version ☺️ I may be layed up in bed with bad vertigo right now, but thankfully I went on a pumpkin baking spree before this happened 🤣 INGREDIENTS - FOR OATS - 1/2 cup certified gluten free oats 1 scoop protein powder (I used @PEScience gourmet vanilla - use code BAILEY at checkout for $$ off all their products) 1/2 tsp baking powder 1/2 tsp pumpkin spice 1/4 cup pumpkin purée 1/4 cup almond milk 1 egg 1 tbsp maple syrup 1/2 tsp vanilla FOR CREAM CHEESE FROSTING - 1/4 cup plain Greek yogurt 1-2 tbsp cream cheese 1 tbsp sugar free powdered sugar DIRECTIONS - 1) Blend your oats on high to create a fine flour. Then add all remaining ingredients for oatmeal and blend till combined. 2) Pour into greased oven safe baking dish and bake at 350F for 22-25 minutes. 3) While that’s baking, make the frosting by combining together the greek yogurt, cream cheese, and powdered sugar in a small bowl. 3) Remove oats from oven and top with “frosting”, pumpkin seeds, chopped pecans, and a dash of pumpkin spice!
