Posted @withregram • @elsas_wholesomelife Avocados are abundant at the moment, and this layered mexican dip is SO easy and great for entertaining 😍🥑 Be sure to save this recipe so you can come back and make it! Ingredients:
Bottom layer:
- 2 x 435g tins of refried beans
 Middle layer:
- 3 large avocados or 4 small avocados
- juice of 1 lemon
- 1/2 tsp salt

Top layer:
- 250g natural coconut yoghurt
- 30g taco seasoning Fresh salsa topping:
- 1 tomato, finely diced
- 1/2 red onion, finely diced
- 1 jalapeno, de-seeded and finely diced
- small handful of coriander, roughly chopped
- juice of 1/2 a lemon

- vegan cheese, as desired
- corn chips, to serve
 Method:
1. Toss together all fresh salsa toppings in a small bowl, set aside.
2. Scoop out the flesh of avocados into a large bowl. Add lemon and salt and mash with a fork until smooth. Set aside.
3. In a small bowl, mix coconut yoghurt and taco seasoning. Set aside.
4. Add the refried beans to a large dish and smooth out evenly. Top with mashed avocado and smooth out evenly, followed by coconut yoghurt layer. Sprinkle with vegan cheese and fresh salsa topping.
5. Serve with corn chips and enjoy! #recipe #plantbasedrecipe #veganrecipes #plantbased
