A sacred ritual in the works: Vinsanto 🍇! Naturally sweet wine, blend of the indigenous varieties Assyrtiko and Aidani. In order to produce it, we sun-dry the grapes, then a slow fermentation follows and ageing in old French oak barrels for a minimum period of 6 years. After bottling, the wine ages further in the bottle. It reveals a complex, aromatic bouquet, ranging from lemon rind, dried fruits such as apricots and raisins, to sweet spices such as cinnamon and cloves, to cocoa, dark chocolate and coffee grains. The main trick in the palate, is the outstanding balance of the sweetness with a refreshing acidity! Vinsanto, with its great ageing potential develops gracefully with cellaring for years on end! 🍃! ___________ Μια "ιερή τελετουργία" εν δράσει: Vinsanto! Φυσικώς γλυκό κρασί, χαρμάνι από τις τοπικές ποικιλίες Ασύρτικο και Αηδάνι. Για την παραγωγή του, τα σταφύλια λιάζονται στον ήλιο, στη συνέχεια ακολουθεί αργή ζύμωση και ωρίμαση σε παλιά γαλλικά δρύινα βαρέλια. Τέλος, το κρασί συνεχίζει την ωρίμαση του στη φιάλη για χρόνια. Αποκαλύπτεται ένα πολύπλοκο αρωματικό μπουκέτο, που κυμαίνεται από ξύσμα λεμονιού, αποξηραμένα φρούτα όπως βερίκοκα και σταφίδες, έως γλυκά μπαχαρικά όπως κανέλα και γαρύφαλλο, έως κακάο, μαύρη σοκολάτα και κόκκους καφέ. Το κύριο χαρακτηριστικό στον ουρανίσκο, είναι η εξαιρετική ισορροπία της γλυκύτητας με τη συναρπαστική φρεσκάδα της οξύτητας!
