Under the Tuscan sun ✨ It was an honor to set the table at Tenuta San Carlo, a breathtakingly beautiful and inspiring place where sweeping meadows, marshes and native trees meet grazing cattle, organic vegetables and fields of rice and grain along the coast of Southern Tuscany. This family-run sustainable farm is modeled after the Earth's natural cycles and is always seeking to support the health of her soil and surrounding ecosystem. The result is a place that's bursting with life at every seam — and guests experienced it all on hayrides that took them across the property and to the beach before sitting down at the table.
To dine there was to taste every part of its terroir: from the saffron risotto made with the farm’s rice to the tortelli pasta made with their wheat to the range of their summer vegetables and greens served alongside locally reared beef.
Guest chefs (and brothers!) honor both the local landscape and tradition at their restaurant Posto Pubblico and their thoughtful approach to the meal was felt in every course.
The meal was made all the more special with local wines from Formiche — four friends who make wine not far down the road — and Ampeila, whose wine is part of their own biodynamic and vineyard just a bit inland. We also got to taste locally made organic vermouth from LaSelva as an appertivo!
