#Ad Have you ever cooked with #jackfruit? The soft, pull-apart texture can be used as a vegetarian substitute for pulled meats – like in my BBQ Jackfruit Nachos recipe. These nachos are sweet from the BBQ jackfruit and pineapple, savoury from the @TostitosCanada Hint of Lime tortilla chips, and creamy from the avocado and sour cream. #LetsToast to these jackfruit nachos that are sure to be a conversation starter at your next summer party. This recipe was inspired by Chef Connie & John’s BBQ Beef Chilaquiles recipe, which you can find on Tostitos.ca. — Ingredients: - 1 Bag Tostitos Hint of Lime tortilla chips - 1 Jar Tostitos Mango Salsa - 1 Can jackfruit in brine (rinse and drain) - 1⁄2 Cup BBQ Sauce - 1 Cup pineapple (chopped) - 1 Avocado (chopped) - 1 Lime - Sliced Jalapeños (garnish to taste) - Chives (garnish to taste) - Sour cream (or plant-based alternative (dip) Directions: 1) Use your fingers to pull apart jackfruit into stringy little pieces. If there are firmer parts of the fruit that won’t come apart, use a knife to help. 2) Mix BBQ sauce and a big squeeze of lime into the jackfruit. Cook on low in frying pan for about 10 minutes, adding water or more BBQ sauce as required to keep the mixture saucy. 3) Put Tostitos Hint of Lime tortilla chips on a serving platter and layer with cooked jackfruit, pineapple and avocado chunks. 4) Garnish with sliced jalapeños and chives. 5) Serve with Tostitos Mango Salsa and sour cream (or dairy-free alternative) as dip.
