Traveling and exploring new places has always been part of our DNA; it’s how we learn, stay inspired, and evolve. For the past two years, we have been studying, traveling and researching the city of Kyoto and the Kansai region – in particular, kaiseki cuisine. For this pop-up, we are working very closely with a wide network of local suppliers, creating a menu with ingredients sourced from local farmers, hunters, fishmongers and foragers. It is equally important that the design and tableware reflects the time and space. As our test kitchen team and project manager begin their travels to Kyoto, we’ll be sharing the behind-the-scenes from every perspective—our test kitchen, our design partners, artisans, and our purveyors—and we hope you’ll follow along! #nomakyoto
