First citrus shipment of the year from our partners @todolicitrusfundacio arrived last week, and this is the first dish as a special today - Scallops with citron salad. ​​​​​​​​ ​​​​​​​​ Only a few citron (aka cedro) varieties have edible pith - this is one of them - the pith is like a mild apple texture and goes very well with the lemon-like fruit, olive oil, olives, marjoram and salt.
