my go-to salmon salad- weekday lunch inspo 🫶🏻 1. preheat your oven to 375° 2. pat 1 lb salmon filet with paper towel to dry 3. coat salmon with 2 tbs olive oil and season with 1 tsp garlic powder, 1 tsp lemon pepper seasoning, and salt 4. bake for 16-18 mins on the bottom rack until cooked through 5. dice 2 celery stalks, 3 tbs dill, 3 tbs green onion 6. remove salmon from the oven, transfer to a plate and let cool for about 5 minutes 7. flake salmon with a fork and remove the skin 8. add salmon, celery, dill, and green onion to a mixing bowl 9. add 2 tbs plain greek yogurt, 1 tbs dijon, the juice of half a lemon, 2 tbs capers, and salt and pepper to taste 10. mix well 11. serve on toast, in salads, or with crackers for an easy weekday lunch! #whatskitcooking #salmonsalad #weekdaylunch
