Haitian Spaghetti(Vegan): RECIPE: Vegan sausage ( I love using fieldroast vegan apple sausages or Tofurky vegan sausage) 1⁄2 of Green pepper 1⁄2 of Red pepper 1⁄2 of white onion Haitian Epis or vegan bouillon Tomato paste 2 tbs olive oil 2 sprigs of thyme 2 minced garlic cloves (feel free to add crushed or habanero pepper if you want it spicy) I love using epis for this recipe. Epis is a traditional Haitian spice mixture which includes: green pepper, red pepper, scallions, shallot, garlic, fresh parsley, fresh thyme, cloves (instead of cloves I use black peppercorn), olive oil, lime juice. (I also add half of a jalapeño for a kick) Boil pasta according to the packaging drain and set aside(be sure to set some pasta water aside). In a heavy large saucepan, heat oil and epis or bouillon then add in tomato paste. Cook tomato paste for 3 – 4 minutes while stirring occasionally. Add onion, peppers, garlic, thyme, and cook for 4 minutes while stirring to melt together. Be sure to season sauce to taste. (Black pepper, all purpose seasoning, etc.) In a separate pan, cook or pan-fried vegan sausages in a very little oil. Add vegan sausages to the tomato mixture. Add pasta to the pot with the tomato and sausages mixture and stir to blend. Add pasta water if needed for preferred consistency. Lower heat and cover and cook for another 4-5 minutes.
