We’ve made a few tweaks to our croissants over the years but these past couple of weeks we’ve been pushing it to a place we didn’t imagine. @rihito_maruhashi came to help us a few years back with our opening and has returned to join forces with @keyyoshii to help us as we expand into our new location (soon)! This looks like our normal chocolate croissant but with a whole lot more going on. We’ve incorporated a poolish which adds depth of flavor and are very excited to finally use whole wheat from @gristandtoll. 13% (23% for the bakers out there 😉) Renan French red wheat is added to the dough for just the right amount of complexity without having a negative effect on texture. Anddddd the Butter croissant also gets the upgrade.
