A little strawb shorty-cake moment for the Fourth! Full recipe below and in my latest substack post 🍓 Strawberry Shortcake For the shortcakes - 1 1/2 cups self rising flour - 1/4 cup sugar - Zest of 1 lemon - Pinch of salt - 8 Tbsp (1 stick) unsalted butter, cubed and cold from the fridge - 3/4 cup to 1 cup whole milk or buttermilk - 1 tsp vanilla - Sprinkle of turbinado sugar (optional) For the marinated strawberries - 1 lb strawberries, quartered - 2 heaping Tbsp sugar - Juice of 1 lemon - Pinch of salt - Big splash of raspberry liqueur - Soft whipped cream for serving Start by making the shortcakes. Preheat the oven to 375. Place the sugar in a small bowl, and zest the lemon into the sugar. Using your fingers, rub the zest into the sugar to release the oil and amplify the lemon flavor. In a separate large bowl combine the sugar, self rising flour, and salt. Whisk to combine. Add in the cold cubed butter and start “cutting” it into the flour mixture by flattening the butter cubes with your fingers, breaking them apart into pea-sized pieces and tossing them back in the flour mixture. You’ll know you’re done when the mixture looks like very dry scrambled eggs, and will hold together when squeezed. Add the milk a bit at a time and stir together with a fork until a wet, shaggy dough forms. You may not need the whole 3/4 cup of milk. Add the vanilla and stir again. Using a cookie scoop, drop the shortcakes onto a parchment lined baking sheet and bake for about 20-25 minutes, or until they are well browned on top. While the shortcakes are in the oven, make the marinated strawberries. Slice the strawberries into halves or quarters depending on how big they are, and place them in a large bowl. Add the sugar, lemon juice, salt and raspberry liqueur and stir to combine. Allow them to sit while the shortcakes finish baking. While the shortcakes cool, make some softly whipped cream. Slice the shortcakes in half, spoon over the marinated strawberries and some of the syrup, add a huge dollop of whipped cream and serve. #strawberryshortcake #cookwithme #fourthofjuly #easyrecipe #dessertideas
