This was inspired by Chilaquiles, one of my all-time favorite Mexican breakfast, but I made it slightly bougie and I’m sort of obsessed! Definitely in my top 5 favorite breakfast items I’ve ever made! Eggs And Caviar Nachos ✨kettle chips ✨Parmesan cheese ✨2 Tablespoons butter ✨3-4 eggs ✨1 small yellow onion ✨1 Tablespoon lemon balsamic vinegar ✨Truffle oil to taste ✨1 lemon and zest ✨1/2 cup ricotta cheese ✨1/4 cup grated Parmesan cheese ✨caviar ✨salt and pepper to taste 1.Heat a pan over medium heat and add 1 tablespoon of butter. 2. Slice the onion and add it to the pan with a pinch of salt and a splash of vinegar. Cook, stirring occasionally, until caramelized, about 10 minutes. 3. While the onions cook, mix the ricotta cheese, grated Parmesan, juice of half a lemon, salt, and pepper in a small bowl. Set aside. 4. Once the onions are softened, add another tablespoon of butter, then crack in the eggs. Lower the heat to medium-low, cover, and cook until the eggs reach your preferred doneness. 5. To assemble, layer kettle chips on a plate and dust them with Parmesan cheese. 6. Top with the caramelized onion eggs, then dollop the ricotta mixture over the eggs. 7. Spoon caviar on top of the ricotta mixture. 8. Finish with a sprinkle of lemon zest and a drizzle of truffle oil.
