WATERMELON, TOMATO & MOZZARELLA SALAD 🍉
🥗 School’s out for Summer, so I thought I’d kick things off with a new Summer salad series for some recipe inspiration that will not only nourish you but keep you cool, too!
🍅 I’ve aimed to include a variety of ingredients and nutrients into these recipes, all of which you can get at a supermarket!
🙌🏻 I absolutely love adding fruit to my salads to provide an extra 1 of your 5-a-day and a delicious naturally sweet flavour of course. Watermelon has a water content of around 90% meaning it’s super hydrating too!
😋 To keep me fuller for longer alongside the mozzarella, I like to serve this with a chopped wholemeal pitta or wholegrain rice for a source of fibre too.

INGREDIENTS 👩🏻🍳 (serves 2)
✔️ 1 pack of rocket leaves 🍃
✔️ 250g watermelon, cubed 🍉
✔️ 1 ball of mozzarella, chopped (I used light to reduce the saturated fat!) 🧀
✔️ 100g plum tomatoes, halved 🍅
✔️ 1 handful of basil leaves 🍃
✔️ 1 small red onion, thinly sliced 🧅
DRESSING
✔️ 2 tbsp extra virgin olive oil
✔️ 1/2 juice of lime
✔️ 2 tsp honey 🍯
✔️ 1 tsp white wine vinegar
METHOD 🥣
1️⃣ Add all salad ingredients to a large bowl and season with pepper to taste.
2️⃣ Combine the dressing ingredients in a small jar and shake before drizzling over the salad.
3️⃣ Mix the salad in with the dressing using two spoons so all ingredients are coated.
4️⃣ Serve on its own or with a side of your choice!
