HIGH PROTEIN PASTA SALAD⁣ 🍗 🥗 ⁣ ⁣ 😋 If you’re looking for the quickest, tastiest high protein meal - look no further! There’s another heatwave this week so cold meals are on the menu in our house.⁣ ⁣ 🙌🏻 For a portion of two, this recipe contains over 50g of protein per portion, 2 of your 5-a-day and over 1⁄4 of your daily fibre recommendation! ⁣ 👨🏼‍🍳 This dish is a perfect ‘cook once, eat twice’ recipe, so great for meal prep to take with you to work or just to make life that little bit easier at home. The sauce is made with low fat cream cheese alongside pesto and lemon to add flavour - red pesto tastes delicious too!⁣ ⁣ 🛒 I found this whole wheat spelt fusilli in Aldi this week and had to try it - It provides extra fibre and protein but you can use any kind you wish! Fusilli works well with sauces as when mixed, gets between the ridges to ensure each piece is flavourful. ⁣ ⁣ Hope you enjoy it and do let me know if you make it! ⁣🍝⁣ ⁣ INGREDIENTS 👩🏻‍🍳(Serves 2-3)⁣ ⁣ ✔️ 200g cooked whole wheat spelt pasta (for extra fibre & protein but you can use any kind if you wish!)⁣ ✔️ 2x chicken breasts, cooked and chopped⁣ ✔️ 100g peppers (colour of choice!)⁣ ✔️ 100g plum tomatoes, halved⁣ 🍅 ✔️ 100g sweetcorn 🌽⁣ ✔️ 1⁄2 red onion, diced⁣ 🧅 ⁣ PESTO SAUCE⁣ ⁣ ✔️ 80g light cream cheese⁣ ✔️ 30g pesto⁣ ✔️ Juice of 1⁄2 lemon⁣ ✔️ Splash of water⁣ ✔️ Pepper to season⁣ ⁣ METHOD⁣ 🥣 ⁣ ⁣ 1️⃣ First, add the pasta to a large bowl, followed by the red onion, sweetcorn, tomatoes, peppers and chicken, then mix together.⁣ ⁣ 2️⃣ Add the cream cheese, pesto and a splash of water, followed by a squeeze of lemon and season with pepper.
