💾 Healthy Rocky Road 😍 If you’re anything like me then you’ll love to have something sweet after a meal - and although I LOVE a ‘real’ rocky road from time to time, this recipe makes having one that little bit less indulgent, and a little more nutritious, but still super tasty! This no-bake recipe is super simple to make (as you’ll see) and it a good one to make with kids too - just make it slightly thinner so it’s easier to eat! 🙌🏻 Do let me know if you give it a go! INGREDIENTS 👩🏻‍🍳 ✔️ 150g dark chocolate 🍫 ✔️ 2 tbsp coconut oil 🥥 ✔️ 30g peanut / nut butter 🥜 ✔️ 3x rice cakes crumbled 🍚 ✔️ 30g Dried cranberries ❣️ ✔️ 30g Mini marshmallows 🍡 ✔️ 30g Chopped almonds 🌰 METHOD 🥣 1️⃣ First, melt the chocolate with the peanut butter and coconut oil in a large bowl in the microwave for 30 seconds at a time, until melted ... 2️⃣ Add all the dry ingredients and stir to combine. 3️⃣ Lightly grease a small- medium sized dish or baking tin before pouring the mixture in and spreading evenly. 4️⃣ Place in the fridge for approx 2 hours to set before cutting into 12 or more squares!
