Dinner for one after a walk in a magical Irish forest. It’s so exciting to come home at different times of the year and see what’s growing wild. I’m usually home either in early Springtime when there’s an abundance of wild garlic and young nettles, or around September when the blackberries are popping and the sloes are starting. There’s usually a sloe gin, followed by a lovely sloe port using the gin infused berries. At the moment I’m really excited to see an abundance of elderflowers so i’ll be heading out to harvest some tomorrow to get some elderflower brews started! I think the last pic is wild yarrow which is also abundant. The nettles are starting to go to seed so soon i’ll be able to get some nice condiments going to have ready for our surf retreat in Strandhill in August/September. Will be making a separate post with all the deets on that! Dinner is a baked sweet potato with a wild prawn, leek, samphire and edamame filling and some @thehappypear pesto which I smear on everything!
