Healthier gingerbread cookies recipe π (this recipe makes 8 large cookies)
πͺ For the cookies:
- 100 g room temperature butter
- 2 eggs
- 2 tablespoons of honey
- 6 drops of Womenβs Best vanilla flavor drops
- 300 g all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon gingerbread spice mix
π§ For the icing:
- 60 g powdered sugar
- 1 tablespoon of milk
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon of beetroot powder
π Instructions for the cookies:
1. Preheat oven at 180 degrees Celsius
3. Add butter, eggs, honey and flavor drops in a food processor and blend on high heat for 2 minutes
5. Add in flour (in 2 batches; blend on high speed after each batch)
7. Take dough out of the food processor (it has to be soft and hold together when pressed between your fingers)
9. Wrap the dough in kitchen foil and place it in the freezer to chill for 10 minutes
11. Roll the dough on a floured surface and cut the cookies, then transfer them into a baking tray lined with baking paper and bake them for 12 minutes at 180 degrees Celsius
13. Let the cookies cool completely before icing them
π Instructions for the icing:
1. To make the icing mix the first 3 ingredients in a small bowl
3. Take out about 1 heaping spoon of icing and mix it with the beetroot powder
5. Add both icings into piping bags (or just regular bags that you can cut the corner to)
6. Decorate your cookies as you wish
