Let sit for 20 minutes then, pat dry. In a bowl combine the breadcrumbs, parsley, oregano, lemon zest and pecorino. In a separate bowl, add the flour. In another bowl, whisk the egg with water. Coat the eggplant with flour, egg wash, then the breadcrumbs. Heat the oil over medium-high. Fry the eggplant for 3-4 minutes each side. Drain on a wire rack. Spicy Cherry Tomato Sauce 1/2 Yellow Onion, thinly sliced 4 Garlic Cloves, thinly sliced 2 Tsp Calabrian Chili or 1 Tsp Red Chili Flakes 1 1/2 c Cherry Tomatoes, sliced in half 1 tb Butter 3 tb Fresh Basil,chiffonade Salt to Taste To Finish Basil Leaves Parmigiano Reggiano Basil Olive Oil Calabrian Chili Oil Lemon Wedges for serving
