What’s your method?
Somewhere about 2012-13, while working at the Aviary, Chef Achatz popped into the prep area. He casually mentioned, “Do you think it would look better if we trimmed all the peels?”. He didn’t tell us to start doing it, but posed the question. Of course, he was right. Countless manicured twists later...I’ve got my technique down- don’t be tickling or nothing.
