- Nouveau Café Gonflé - BAR NOUVEAU will be a small (16m2 small 😳) bar in the middle of Paris. At the moment we see it as a bistro with about 12 chairs around an tiny island bar, open from 1PM to 1AM. We all know Gnac & coffee is a thing in bistros SO We making our own and it looks like: Martell VSOP Kokuto sugar Coconut water Coffee We blend the liquids, keep it cold & on service pass it trough @drinkosma. This machine isn’t meant for mixed drinks and I can’t speak too much about it’s objective quality for coffee extraction BUT to us it is full of perks, it extracts just the right amount of coffee & adds a nitro-like texture that I love. And now; a naive breakdown of how it works: 1. The batched drink at 3 degrees 2. The pump that sucks the liquid in 3.The group head, where sinusoidal pressure oscillation causes bubble nuclei in the coffee and water to expand and contract (that’s copy & paste, don’t ask) 4. Portafilter with 25g of a blend (60% Brazilian & 40% mid roast Ethiopian). ALSO I will make it with @martellofficial in New Orleans for @tales_of_the_cocktail so you can try it before @bar_nouveau_ opens.
