Here’s my recipe for salsa-marinated grilled chicken skewers with halloumi cheese and summer veggies - it’s the perfect dish for summer BBQs with friends and family! #letstoast Ingredients: 1 jar Tostitos Mild Salsa 1 bag Tostitos Hint of Lime tortilla chips (for serving) 2 chicken breasts 8 wooden grilling skewers 250g halloumi cheese Your choice of summer veggies (e.g. zucchini, yellow squash, corn on the cob, mushrooms, bell pepper, onions) 2 tbsp olive oil Directions: 1) Cut chicken, cheese, and summer veggies into 2 inch chunks. For mushrooms, cut in half. For corn on the cob, chop it into 2 inch segments. 2) Marinate chicken in 1⁄3 cup of Tostitos Mild Salsa for at least 20 minutes. You can do this the night before and leave covered for up to 24 hours in the fridge. 3) Place chicken, cheese and veggies on skewers, and brush with olive oil. 4) Grill skewers on BBQ for 5 to 8 minutes per side, until chicken is cooked, monitoring to prevent burning. 5) Serve with remaining salsa from the jar and a side of Tostitos Hint of Lime tortilla chips.
