No matter where you stand when it comes to leftovers, there’s no denying that Mini Turkey Pot Pies are a delicious idea! 😉 Our family loves making these because they’re single-serving sized and the recipe is simple. Plus, they’re great for changing things up when you—inevitably—reach your turkey sandwich limit!⁠ ⁠ P.S. We also love using our extra leftovers in turkey enchilada soup and turkey burritos! 🌯 ⁠ Ingredients 1 pack Siete Grain Free Almond Flour Tortillas Olive oil or avocado oil spray, as needed 1 small white or yellow onion, diced 1 carrot, peeled and diced 1 celery stalk, diced 2 Tbsp olive oil 2 Tbsp cassava flour 1/2 tsp sea salt Freshly ground black pepper, to taste 2 cups chicken or turkey broth 2 cups roasted turkey, shredded 2 cups mashed potatoes Directions 1. Preheat oven to 375F and gently warm the Almond Flour Tortillas until they are pliable. 2. Place the softened tortillas into 8 ramekins, fitted to the shape of the bowl 3. Lightly spray tortilla crusts with olive oil or avocado oil spray 4. Bake at 375F for 5-7 minutes or until lightly browned 5. To make the filling, heat olive oil in a saucepan over medium heat. Add the diced onions, celery, and carrots and cook until softened. 6. Add cassava flour and cook for 2 minutes to create a roux. Season with salt and pepper to taste. 7. Add chicken or turkey broth and simmer until thickened. Add shredded turkey and remove from the heat 8. Place about 1/2 cup of filling in each tortilla crust, or until filled to the top of the ramekin 9. Top the filling with mashed potatoes and spray with a small amount of olive oil cooking spray 10.
