🌮🌮TACO STUFFED PEPPERS. With @shredhappens . Quick and easy weeknight meal that will never disappoint - I had these for lunch yesterday and they really hit the spot! Feel free to swap out the protein to what works for you, and as far as toppings go, get as creative and over the top as you want! . Here is how I made mine: . 1.First, lets get the peppers going. Cut a few bell peppers in half, scoop out the middle. Bring a large pot of water to a boil, remove from heat, throw in the bell peppers, close the lid, and keep the lid on for 5-6 minutes for the peppers to soften up. You dont want to go longer here otherwise the peppers will get super soft/mushy. Remove the peppers, tap them to remove excess moisture, then place on a sheet pan. . 2.Preheat oven to 425F. . 3.Grab 1lb grassfed ground beef or protein of choice. Add 1 packet of taco seasoning (be sure to use one that doesnt have preservatives or sugar added to it). Give it a really good mix, then add to a pan with 1 tablespoon of avocado oil and cook it up. You’ll want to use a spatula to break apart the taco meat so its small and not clumpy. . 4.When its almost done, remove from the heat, then stuff the bell peppers. You can use however much or little of the mixture you like on your peppers - but I put about 3oz of meat on each bell pepper half. . 5.Top with cheese, then place in the oven at 425F for 10 minutes. . 6.While thats going, get your toppings ready. I added guac, jalapeños, fresh cilantro, sour cream, lime juice, and chile lime seasoning. . 7.To make the guac, I added 1 avocado to a bowl, the juice of 1 small lime or half a lemon, 2 fresh garlic cloves finely minced/grated, salt, pepper, and a large handful of finely chopped cilantro. Add whatever ratios you like. Give it a good mash with a fork or spoon. . 8.Remove the taco stuffed peppers from the oven, top with the guac and the rest of your toppings and enjoy!! .
