We loved this recipe for the whole family, but this was specifically great for my vegan toddler because it had veggies, beans, nuts, other healthy additives all in the pasta sauce! ☺️🙌🏾🌱 This recipe was originally made by @that.veganbabe ! 🌱☺️ I made just a few edits for our dinner! Recipe👇🏾👇🏾 - 1 red onion - 1 red bell pepper - 1 yellow bell pepper - 1 orange bell pepper - 5 cloves garlic - 1 can cannellini beans - 1 tbsp tomato paste - 1/2 tbsp basil - 1/3 cup of nutritional yeast (or more 😊) - 1/3 cup walnuts - 1/3 unsweetened plant milk (I used homemade cashew & hemp milk) - 1 tbsp hemp seeds - Salt & pepper to taste Directions: 1. Sauté your onions & garlic for about 5 minutes. Then add in your bell peppers and sauté for another 5 minutes. 2. Put all ingredients into the blender and blend until smooth. 3. Pour over your choice of pasta & enjoy! 😊 How could you not love a good pasta recipe?? And if you want more nutrients, I usually use a legume based pasta like chickpea or lentil pasta for Maddie! I paired her dinner, as well as ours, with sautéed kale.
