In a country home to over 30,000 sushi restaurants, less than 10 percent of sushi chefs are women. But Japan’s female sushi chefs are claiming a seat at the counter.
“Old myths regarding women’s inability to craft the same caliber of sushi as their male counterparts, including a claim in 2015 from the heir to Jiro Ono, the subject of the hit documentary, ‘Jiro Dreams of Sushi’, that women’s menstrual cycles can impact their palate, are now, for the most part, laughed off. (As science has proven for centuries, women’s body temperatures are the same as men’s—and not too warm to form proper nigiri.)”
