Friends! We are honored to introduce our first hire at Milli- someone we are super exited about, our new Head Baker Lou Turner! Here’s a brief into Chef @__louise_turner “Originating from the east coast, I find that my baking / cooking is a culmination of who I am—a knowledge driven individual excited and rooted in the growth of myself and the community I surround myself with. Each item I put on a plate is designed from rigorous years of pursuit of knowledge, respect of technique, and experiencing life through a lens of ingredients and food. I come from a humble beginnings of a Pennsylvania German household, familiarized with farmhouse milk, local butchers, and roadside produce stands. Throughout my journey, I have internalized each and every experience and opportunity that has come my way—from years of savory chef experience to butchery and bartending aiding in my expression of food. Years of self taught pastry lead to the leadership of my most recent laminated pastry program at Obelix. I hope to continue and evolve within the space of Milli to create a dynamic and sustainable pastry program focusing on our internal and external community within Chicago.
