This is Lemon Torta Caprese, often called Torta Caprese Bianca in Italy so as not to confuse it with the more popular variant made with the popular dark chocolate cake from Capri (Caprese- “Capri Style”).
This version is made with white chocolate and lemon as it’s name suggests.
It is dense, delicious, naturally gluten free and not too hard to make!
Ingredients
340 grams ground almonds
2 tablespoons cornstarch
170 grams white chocolate
170 grams white sugar
170 grams unsalted butter
1/2 teaspoon salt
4 large eggs separated
2 tablespoons fresh lemon juice + more for brushing
1 tablespoon limoncello (substitutes listed on site)
zest of 2 lemons
