As the end of the year approaches, we decided to check in with our incredibly talented Chef Kirstyn Brewer, someone who has been with us every step of the way. We wanted to see how she’s feeling about where we’ve been and where we’re going with Winona’s.
For one thing, Chef K is excited to get dinner to the level where it’s running itself so that she can focus on the ever imminent brunch.
When asked about some of her favorite culinary moments at Winona’s so far she said, “I actually really liked the grilled shrimp with smoked olive and white bean purée. The bone marrow with braised beef cheek is also up there.”
And what to expect in 2023; ”maybe it would be fun to rewrite some forgotten oldies from my past, like a braised turkey leg or pork jowls with bbq lentils.”
Either way, we are excited to be helmed by such a versatile and amazing Chef!
2023 is going to be a good year people!
