Made a Pavlova last month and messed up epically, with the worst part being that it was unclear where I went wrong. The whole thing turned out salty, to the point of being inedible. I know for a fact I used sugar and there was zero salt in there. It all remains a mystery to this day 😅 So, when I saw Lamingtons, another Aussie classic, up next on my baking list, I was nervous. Luckily, this one turned out edible. I used @doriegreenspan's recipe, with an addition of raspberry jam in the centre. Also had a lot of fun with the assembly of these.
