Looking for an easy dinner with plant based pantry staples & is toddler friendly?? I got you! 😁🌱👶🏽 Maddie ate like 5 of the fritters so i know they were good 🤣🤣
Ingredients 👇🏾
- 1/2 bag of 12oz frozen spinach (cooked)
- 1 1/2 cup of cooked quinoa @sprouts
- 1/2 cup of chickpea flour @bobsredmill
✨Optional: I added these seasonings for more flavor!👉🏾 nutritional yeast, sea salt, garlic, & onion powder.✨
You can adjust the recipe as needed. Add a tbsp of water if the mixture is too thick or add more chickpea flour if it’s not thick enough!
Heat your pan with some oil. (I used olive oil.) Form little patties and fry on both sides until golden brown. You may need to add more oil to the pan to prevent sticking with each batch!
These fritters are now going to be a staple in our household! I could have easily added hemp seeds for even more protein. I also paired the fritters with some homemade vegan ranch.😋 Try these out and tell me what you think!☺️🌱
