The cake is light and floral with a golden, slightly crunchy crust and a fluffy inside (kinda like me perhaps??) It’s a simple loaf cake that’s delicious and comes together easily. So sip slow, be present with every bite and relish in the people you care about 🧚🏽‍♀️✨💖 Recipe: 2 cups AP flour 2 tbsp tapioca flour 1 tbsp baking powder 1/2 granulated sugar 1/3 cup EVOO 1/2 cup coconut milk 3 tbsp lemon zest 1 tbsp orange zest 2 tbsp lemon juice 1 tsp vanilla extract Glaze: 1/2 powdered sugar 1/4 cup EVOO Juice of one lemon 2 tbsp orange juice zest of both (You can play a bit with zest and juice ratios to your preference <3) Method: Pre heat oven to 350 Whisk coconut milk so there are no chunks, must be throughly combined. In the same bowl add in all wet ingredients, whisk together then add sugar. Whisk until combine, set aside. Sift dry ingredients in a medium bowl then add wet ingredients. Fill batter 3/4 of the way into oiled mini loaf pans and bake for about 40 minutes or until risen and have a slight golden brown color. Cool for 5 minutes and take a bite of simple delight ✨
