Roasted vegetables:
1 large sweet potato, diced
1 lb brussels sprouts, halved
1 tbsp coconut oil, melted
1 tsp Anima Mundi Herbals Golden Sun Milk
Sea salt to taste
Harvest bowl ingredients:
4 cups roughly chopped kale
1 1โ2 cups berlotti beans, kidney beans, or chickpeas
1โ2 cup diced rainbow carrots
1โ4 cup pumpkin seeds
1โ4 cup walnuts
1โ4 cup pomegranate seeds
Golden Sun Milk Tahini Dressing:
1 lemon
2 tbsp tahini
1 tbsp Anima Mundi Herbals Golden Sun Milk
Directions:
Begin by roasting the vegetables first. Preheat the oven to 400F. Ross the diced sweet potatoes and brussels sprouts in the coconut oil and Anima Mundi Herbals Golden Sun Milk. Spread the vegetables onto a baking sheet lined with parchment paper, and bake for 35-40 minutes, or until roasted. Remove from the oven and set aside.
Make the dressing next. In a small bowl, whisk together the juice from 1 lemon, tahini, and Anima Mundi Herbals Golden Sun Milk. Whisk until creamy. Combine into harvest bowl!
