Crispy rice with spicy salmon is the perfect appetizer. I love the crispy rice, it’s got that crunchy outer layer and chewy center. Ingredients: 1/2 lb of sashimi grade salmon 3 tbsp Japanese kewpie mayonnaise 2 tbsp sriracha 1 tbsp mirin 1 tbsp ponzu sauce 1 tsp sesame oil 2 stalks of chopped green onions (green part) Crispy rice: 2 cups of sushi rice (cooked) 2 tbsp rice wine vinegar 1 tsp sesame oil 1/2 tsp sugar 1/4 tsp salt 3 tbsp oil for frying Jalapeño and sriracha for topping Cut salmon into small cubes. Add kewpie mayo, sriracha, ponzu sauce, mirin and sesame oil along with green onions. Cook rice and add rice wine vinegar, sesame oil, sugar and salt. Press cling wrap into a baking dish and press the rice firmly into the dish and refrigerate for a couple hours to let it stiffen up. Cut into cubes then pan fry for a couple minutes on each side until crispy. Top the crispy rice with the salmon and top with jalapeno and sriracha. #crispyrice #salmon #appetizer #sushi #recipe
