At Milli our pastry program is designed to compliment the coffees we serve from Metric. Our pastries begin in the same place–in the fields, under the sun, carried in the air. Grain catches sunlight, grasses become transformed into cultured dairy, wild yeasts travel through the air to breathe elevation and expansion into our doughs, time allows for flavor to deepen. Quiet alchemy is the foundation of what we bake and serve alongside our coffees. We practice restraint when it comes to overt sweetness, focusing on the culmination of flavors between coffee and pastries, all to be enjoyed together. What lands on our tables or in our pastry boxes is more than just food, but a manifestation of the chain of intentional cultivation, sunlight and breath made edible. Beautiful things often take time to reveal themselves, ripening to sweetness. We thank our community for being patient with us as Milli has taken time to unfold and continues to do so. We welcome you all warmly to finally enjoy the beginning of what we have been quietly working on for years, starting tomorrow, Thursday September 4th until Sunday September 7th.
