Make this #GainfulRecipe yourself by following along below: Zucchini Bread: -2 cups brown rice flour -1 cup coconut sugar -1 scoop of #GainfulProtein -Matcha Flavor Boost -1 tsp baking powder -pinch of sea salt -1⁄2 cup avocado oil -3 eggs -1 zucchini grated -1 teaspoon vanilla Matcha Coconut Glaze: -1 cup canned coconut milk -1 tsp maple syrup -1 Matcha Flavor Boost Directions: -Preheat oven to 375 degrees and prepare loaf pan with parchment paper or grease with olive oil -Grate zucchini and squeeze out excess water with a cheesecloth -To make the bread, in a small bowl whisk together all wet ingredients including zucchini -In a large bowl, mix together all dry ingredients. Slowly add wet ingredients into bowl with dry ingredients. Mix together thoroughly -Pour into the loaf pan and bake for 50-60 minutes -For the glaze, mix together coconut milk, maple syrup and Matcha Flavor Boost -Pull bread out of oven once done and let cool completely. Pour glaze on top of loaf and enjoy!
