Zucchini and Sweet Corn Chickpea Fusilli 🌱
Using up the last of our summer ingredients for this perfect #meatlessmonday recipe by @veggiechristie
Protein and fiber packed and so good.
🌱2c cooked Explore Cuisine Chickpea Fusilli) (reserve about 1/2c pasta water)
🌱2tbsp vegan butter
🌱2c thinly sliced zucchini
🌱1/2c diced onion
🌱1 ear of corn, cut off the cob
🌱1-2 cloves garlic, minced
🌱2/3c vegan parm
🌱2tbsp fresh basil
🌱salt, to taste
🪴Sauté zucchini, onion, and corn in butter for about 5 minutes until tender. Add garlic and sauté for another minute. Stir in cooked pasta, cheese, and a little pasta water to get the level of creaminess you’re going for. Stir in fresh basil and salt.
