With this Peach Upside-Down cake, you will remember those summer evenings and savor the flavor of ripe peaches. I made this cake gluten-free and used Oat and Buckwheat flour, but you can substitute with All-purpose flour if you wish. Easy to make and “oh so delicious”.
Here is the recipe:
Vegan & Gluten-free Peach Upside-Down cake
420 grams (1 lb)peaches, pitted and thinly sliced
180 g unsweetened plant-based milk, I used Soy
1 tablespoon apple cider vinegar
1 flaxseed egg (1 tablespoon ground flaxseed with 3 tablespoons water, let sit for 10 minutes)
1 teaspoon baking powder
1 teaspoon baking soda
50 grams (1/2 cup) almond flour
70 grams (1 cup) oat flour
90 grams (3/4 cup) buckwheat flour
A pinch of fine sea salt
