Garden Egg Stew! Yes, garden eggs are a type of eggplant. Sometimes I sub diced Italian eggplants in this recipe if I don’t have any garden eggs. This is not made the way Ghanaians typically make it, with dried fish, shrimp and even canned fish. I wanted a quick simple dinner so just made this with stewed tomatoes, 1/2 of a leftover red bell pepper, onions and of course my boiled garden eggs. Served it with a boiled unripe plantain. Simple, tasty and filling! Ingredients 1/2 red onion, thinly sliced 4 small-medium tomatoes, diced 10 garden eggs, boiled and diced 1/2 red bell pepper, diced 1/3 cup palm oil 2 scotch bonnet, 1 whole, 1 minced Salt to taste Pepper to taste
