These energy balls are gluten-free, refined sugar free and refined fat free! What’s not to love about them? 1 cup (150 grams) peanut butter 1⁄2 cup (50 grams ) oats 1 tbsp vegan banana protein powder* optional 1⁄2 tsp fine sea salt 2/3 cup (about 12) medjool dates, pitted 1⁄4 cup maple syrup (60 grams) 1 cup (175 grams) dark chocolate In a food processor, combine the peanut butter, oats, protein powder, salt,and maple syrup. Process until smooth and transfer batter to a bowl. Roll the batter into bite-sized balls, and place in the fridge to chill. Melt the chocolate over a hot water bath. Remove the balls from the fridge and line a baking tray with parchment paper. Roll the energy balls in the melted chocolate, using a spoon for easier handling. Place them on the parchment paper.
