What do you get when you take 2 popular and beloved Jewish foods and combine them? Leveled up latkes with a smoked salmon dip! Is your mouth watering yet? #JewishFoods #Kosher #AvocadoOil #Hanukkah Recipe and Directions: Peel and grate 2 large potatoes in a large bowl over a cheesecloth or kitchen towel. Once grated, wrap the potatoes in the towel and twist to squeeze out extra moisture into a bowl or in the sink. Place the shredded potatoes back in the large bowl and sprinkle with salt, pepper and flour. Add 1 egg and grate 1⁄4 of a white onion on to the potatoes. Mix until well incorporated. Place a medium sized skillet over medium-high heat and add about 3 tbsp of avocado oil. Allow a minute or two for the oil to heat. Scoop 2-3 tablespoons of mixture per latke and fry for 2-3 minutes per side or until golden brown. Place the crispy latkes on a paper towel or rack and keep warm. For the dip, mix 3 ounces of smoked salmon, 1⁄3 cup of crème fraiche, 2 tablespoons of avocado oil mayo, 1⁄2 teaspoon salt, 1⁄4 teaspoon pepper and 1 teaspoon of pickled mustard seeds. Mix until combined and serve with your crispy latkes.
