As a food blogger I am hyper-aware of the privilege I have because of my access to an abundance of nourishing food. 1 out of 9 people in the world don’t have enough food and 70% of people affected by the world hunger crisis are women and girls. #FoodIsAHumanRight, which is why I’ve partnered with @plancanada to ask you to take action and ensure that millions of people globally get access to nutritious food. Ethiopia, Nigeria, Sudan, and South Sudan are among the most food insecure countries. I made a simple dish in this video, Ful medames. It is thought to be the national dish of Sudan and South Sudan though it is eaten throughout the Middle East and known to have originated in Egypt. It is a dish made of fava beans that are mashed, simmered and seasoned with cumin, paprika, salt and pepper. Though making a serving of this dish costs less than a dollar, many people around the world cannot afford this. Click the link in my bio to learn more and donate. Ingredients - 2 cans of fava beans - 1⁄4 - 1⁄2 red onion diced - 1 teaspoon cumin - 1 teaspoon paprika - 1 tablespoon cilantro, chopped - 1 tablespoon parsley, chopped - salt to taste - black pepper to taste - 3 garlic cloves, minced - 1-2 cups of vegetable stock or water - juice for half a lemon - Pita to serve (recipe below) To serve - 3 boiled eggs, quartered - Olive oil - 2 garlic cloves, minced - 3 tablespoons of chopped parsley and cilantro - 1-2 tomatoes, diced - Salt to taste - 2 hot peppers, chopped Pita - 2 teaspoons active dry yeast - 1/2 teaspoon granulated sugar - 1/4 cup (35 grams) whole-wheat flour, preferably freshly milled like spelt, einkorn etc. - 2 1/2 cups (310 grams) of all-purpose flour - 1 teaspoon kosher salt - 2 tablespoons olive oil
