I say it with so much pride when I declare Kare Kare as my all time favorite Filipino dish. It was ALWAYS the one I was most excited for whenever my mom would start cooking & I’d smell that beefy-peanut butter wafting through the air. As a Filipino-American there was always this underlying comfort in knowing peanut butter played a pivotal role in this humble & hearty stew. Knowing the same peanut butter all my non-Filipino friends had in their pantries & in their PB&Js at school was the same peanut butter I’d smother the shit out of my rice with long after all the oxtail & veggies had been devoured. My fuckin favoriiiiiiiiite. Come try it, it may or may not change your life, or it might slap you with nostalgia & make you shed tears at the table. All is welcomed.
