Ingredients:ā£
2 chicken breastsā£
1 tbsp olive oilā£
2 garlic cloves mincedā£
50g butterā£
1 tbsp dried parsleyā£
6 soft white rollsā£
100g pestoā£
100g sundried tomatoes roughly choppedā£
240g grated mozzarellaā£
ā£
Method:ā£
1. Pre-heat your oven to 200C/180C fan/gas 6 and line 2 baking trays with baking paper.ā£
2. Pop your chicken breasts onto a lined tray, drizzle with oil and season all over with salt and pepper before covering with foil, popping in the oven and baking for 25 mins until cooked through.ā£
3. Meanwhile, melt your butter with your garlic in a pan and stir through your mixed herbs before setting aside.ā£
4. Now onto the rolls! If pull apart rolls you can leave them stuck together and slice them all at the same time. Pop the bottom half onto a lined tray and spread each with pesto followed by a scattering of sundried tomatoes.ā£
5. Once your chicken is cooked use two forks to roughly shred apart each breast and then evenly pile onto each roll before topping each with mozzarella and the bun lids.ā£
6. Brush your buns all over with your herby garlic oil, cover with foil and pop in the oven for 15 mins until your mozzarella is melted, gooey and ready to pull apart!ā£
