A super affordable and delicious dish to impress guests when dining in the garden this summer! ā£

You only need 7 ingredients, with lots already being in your cupboard. Make sure to add all the ingredients onto pitta breads to keep little tummies happy too - swipe left for some inspo!ā£

What youāll need:ā£

4 large beef tomatoes slicedā£
250g mozzarella drained and thinly slicedā£
Bunch of fresh basil ā£
2 tbsp pestoā£
50ml olive oil plus a little extra to drizzle ā£
Balsamic glaze to drizzleā£
To serve (optional)ā£
Toasted ciabatta slicesā£

How to make this simple summer dish:ā£
ā£
1. Lay your beef tomato slices on a large sharing plate and loosely alternate and arrange with your mozzarella slices and 3/4 of your basil.ā£
ā£
2. Season all over with sea salt and a pinch of black pepper before mixing your pesto and olive oil and drizzling all over.ā£
ā£
3. Finish with a drizzle of balsamic and a little more oil if needed and serve with toasted ciabatta for a light and fresh no-cook, no-faff dish!ā£

To make our easy-caprese pittas:ā£
ā£
1. Pre-heat your oven to 200C/180C fan/gas 6 and line a tray with baking paper. ā£
2. Lay your pittas on your baking tray and top each evenly with your tomatoes and mozzarella before seasoning with a pinch of salt and pepper and drizzling all over with olive oil and popping in the oven for 10 mins. ā£
3. Whilst you wait, mix your pesto with 50ml of oil. Once your pittas are golden and mozzarella is oozing, remove from the oven. ā£
4. Drizzle each with pesto followed by a scattering of basil for a simple, quick and tasty dinner the kids will love!
