vegan zuppa toscana 🍂🥣🫶🏼 my fav fall soup! super cozy. #veganrecipes #veganzuppatoscana #zuppatoscana #zuppatoscanasoup #fallsouprecipe #comfortfoods #cookwithme #falldinnerideas #soupseason You’ll need: * 1 tablespoon olive oil or vegan butter * Spicy Italian Vegan Sausage * 1 head garlic * 1 yellow onion, finely diced * veggie broth * 2-3 russet potatoes thinly sliced * 1 head of chopped kale, stems removed * 1 cup coconut milk unsweetened * Salt and black pepper, red pepper flakes and paprika to taste (added dried bay leaves) To cook: * Warm the olive oil over medium-high heat in a large dutch oven or pot. Add the garlic and onion. With salt, black pepper, red pepper flakes - Sweat them! * Add the sausage and cook for 3 minutes or until brown * add the potatoes, stir, add broth, add dry leaves. Bring to a boil over high heat; reduce the heat to medium-high and boil the soup for 10 to 12 minutes, or until the potatoes are fork tender. * Reduce the heat to medium low, but maintain a simmer. Add the kale and coconut milk and simmer for 3 to 5 minutes, or until the kale is tender. Turn the heat off and season with additional salt and pepper to taste, if necessary. Serve!
