As my farmer friend Larry Kandarian says: “It’s time we put the culture back in agriculture!”
Traditionally our ancestors would never take just the finer cuts of meat from an animal and call it a day. They knew the value of the whole animal and cooking nose to tail. In a time where food security and food sovereignty threatens us all, it’s important we learn the skills that were once commonplace in our kitchen rhythms as humans. The ownership of taking a life to nourish our own is missing in our society - we are disconnected from reality when we think we can avoid death in agriculture.
I have such reverence for these beautiful animals that regenerate our soils all the while converting what we can’t eat into the most bioavailable nutrition for humans.
