It’s Fall, it’s Friday and I think we all deserve these Apple Pie Cheesecake Cookies this weekend 🍎 full recipe below, let me know if you try them! ☺️ #trendingrecipe #friday #fall #applepie #cheesecake #cookies #falldesserts #fallbaking #baking #igbaking APPLE PIE CHEESECAKE COOKIES Yield: Makes 8 cookies Ingredients: Apple Pie Filling: 2 medium apples, peeled, cored and diced Juice of 1/2 lemon 1/4 cup dark brown sugar 1 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1 tablespoon corn starch 2 tablespoons water Cookies: 1 3/4 cup all-purpose flour 1 teaspoon baking powder 1/4 teaspoon salt 4 ounces cream cheese, room temperature 6 ounces unsalted butter, room temperature 1 1/2 teaspoons vanilla extract 5 graham crackers, crushed 1/4 cup caramel sauce, for serving Instructions: In a small saucepan over low heat, combine apples, brown sugar, lemon juices, cinnamon, nutmeg and corn starch. Increase heat to medium, stirring occasionally adding 1 tablespoon of water at a time if needed. Cook for about 10 minutes or until apples are softened; set aside. I’m a small bowl, combine flour, baking powder and salt. Mix well and set side. In another bowl fitted with a paddle attachment, beat cream cheese, butter, vanilla and sugar until smooth and creamy, about 2 minutes. Add egg and mix until just incorporated. Turn off mixer and slowly fold flour into mixture until just combined. Refrigerate dough for 1 hour. Preheat oven to 350 and line baking sheet with parchment paper or aluminum foil. Add graham cracker crumbs to a shallow bowl and roll 1 tablespoon of cookie dough in. Repeat with remaining dough and crumbs. Use your thumb to make an indentation in the center of each ball. Place a heaping tablespoon of apple pie filling in the center. Bake until golden brown, about 15-18. Cool completely before drizzling caramel sauce on top.
