Roasted Carrot and Apple Soup
1lb carrots, cleaned
3 Medium Sized Apples (McIntosh/ Honeycrisp/ Gala)
1 Medium sized yellow onion, diced
4 cloves garlic (skin-on)
3 tbsp olive oil
1 tbsp fresh thyme
2 cups vegetable broth
1-1.5 cups cream
Salt, pepper to taste
Preheat oven to 425F
Cut carrots into 1 inch pieces. Roughly chop apples into 1 inch pieces
In a baking tray, combine carrots, apples, diced onion and garlic cloves (skin-on). Drizzle over olive oil and add salt and pepper. Mix half of the thyme and bake until the carrots soften (about 25-30 minutes).
Blend together the roasted veggies with broth and cream. Transfer to a pan, add remaining thyme, and bring to a simmer. Adjust seasoning and serve with fresh croutons.
