It’s time to reset our expectations around grapes.
Many of us have become used to the homogeneity of standard offerings: taut, waterlogged grapes with no notable flavour profile beyond 'sweet'.
Right now, we're sourcing five grape varieties from minimum intervention growers in Piedmont, Italy and Moissac, southwestern France. We have selected each variety to demonstrate what is possible when we set flavour as the marker of quality.
FRAGOLINA
With flesh that separates easily from their thick skins, these grapes have a distinct flavour reminiscent of cooked strawberry. They grow in tight clusters, forming medium sized fruits with a sweet, musky aroma.
CHASSELAS
Growing loosely on the vine, Chasselas Grapes offer a sweet, smooth flavour with a definite hit of tannins coming from the seeds and thick skins.
BLACK MUSCAT
These dark, round grapes have a delicate floral quality and are rarely seen as table grapes, with most grown for industrial wine production. Their sweetness is offset by some astringency in the skins.
FRAMBOISINE
With subtle notes of raspberry, the pink Framboisine Grape is small with thin, semi-translucent skin and intensely sweet flesh.
CENTENNIAL
Notable for their lack of bitterness - due to their seedless flesh and thin skins - these sweet oblong grapes are balanced by some acidity and grow loosely on long stems.
